Plating with Colors
I worked with a chef that showed me this idea as well as teach me a few unique ways of plating food. His name was Lucas Chandler and he always used similar colors on the same plate as a sort of uniform chaos. This was something I made up for a VIP at Pueos Restaurant in Waikoloa village, Charred Salmon, Papaya, Mandarin Orange, Chili Threads, Fern Shoots, Ogo, Chive/Chili Oil… Or as I liked to call it Variations of Orange.
